Black Bean and Spinach Veggie Burger

The Seamaiden has been gravitating back to her old vegetarian ways, and surprisingly, the Seamaster has been coming along for the ride. But don't worry. Plenty of the essential sea delicacies will remain on our menu!



Ingredients
1 can (15 oz.) low sodium black beans, drained and rinsed
4 tbsp. olive oil
4 cloves garlic, minced
5 oz. frozen spinach, thawed
1/2 tsp. sea salt
1/4 tsp. pepper
1/2 cup panko

Directions
In a medium mixing bowl, mash beans with a potato masher. Heat 2 tbsp. olive oil in large skillet. Add garlic and spinach and cook approximately 1 minute.
Add garlic, spinach and all remaining ingredients to beans. Mix thoroughly and shape into 4 patties.
Heat remaining 2 tbsp. in skillet. Add the patties and cook until browned on both sides (6-8 minutes).
Transfer burger to paper-towel lined plate to drain excess oil.
Serve with onion, tomato, lettuce and any condiments you desire on whole wheat buns or sandwich thins. Great served with a rice dish on the side!
Makes 4 servings.
