Seamaiden Scallops on the Half Shell

The Seamaster has been working extra hard this week, so I thought I would surprise him with a midweek romantic dinner. I served these scallops up on some pretty lion's paw half shells.

Ingredients
4 tbsp. butter
1 lb. fresh bay scallops
3 cloves garlic, minced
2 cups panko
4 medium tomatoes, diced
1/2 tsp. and a dash kosher salt
Dash of pepper
1/4 cup chives, chopped

Directions
Preheat oven to 450 degrees F.
Melt the butter in a skillet over medium heat.
Saute scallops for several minutes until done. Add garlic and dash of salt and saute for 1 minute.
Remove pan from heat and add panko. Mix well and set aside.
In a baking pan, combine tomatoes, 1/2 tsp. salt, pepper and chives.
Top tomato mixture with scallops and bread crumb mixture and gently combine.
Bake for 8-10 minutes until golden brown on top.
Spoon onto half shells and serve.
