Sweet Pepper Scallop Boats
The Seamaiden completely flew by the sea of her tailfin with this recipe, but the Seamaster gave it his unqualified stamp of approval!
Ingredients
1 tbsp. olive oil
2 cloves garlic, minced
1 lb. bay scallops
8 green onions, chopped
1 tbsp. chives, chopped
1/4 sea salt
1/4 tsp. pepper
12 sweet peppers, halved with tops, seeds, membranes removed
Shredded mozzarella and parmesan cheese
Directions
Preheat oven to 400 degrees F.
Heat olive oil in a skillet. Saute garlic for about 1 minute.
Add scallops and saute for several minutes until firm.
Add green onions, chives, salt and pepper and saute for 1-2 minutes.
Top each halved sweet pepper with scallop mixture and arrange in shallow baking dish.
Top each halved pepper with a smattering of shredded cheese.
Bake until cheese melts.
This dish is great served with brown rice seasoned with garlic on the side!

A Seamaiden's Bobble Purse
This sweet little bobble stitch clutch was made with Paton's Silk Bamboo yarn in magenta. It is also adorned with an antique silver frame and a magenta lining with gold leaf embellishment. It's so cute, I may just stitch up one in white for the wedding!
